As the weather gets a little cooler, I immediately start thinking of those warm, comforting dishes that soothe your soul. Here’s a classic recipe for stuffed peppers that incorporates Oliverio Peppers to cut down on some prep work.

Ingredients

  • 4 large bell peppers, any color

  • 1 pound ground beef or Italian sausage

  • 1 cup cooked rice

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 jar Oliverio Peppers in sauce (desired hotness)

  • Salt and pepper to taste

  • 1 cup shredded mozzarella cheese (optional)

  • Fresh parsley or basil for garnish (optional)

Instructions

Preheat: Preheat the oven to 350°F.

Prepare the peppers: Cut the tops off the bell peppers and remove the seeds and membranes from the inside. If the peppers don’t stand upright on their own, carefully cut a small portion off the bottom to make them flat.

Parboil the peppers: Bring a large pot of salted water to a boil. Carefully place the bell peppers in the boiling water and cook for about 3–4 minutes, until they begin to soften slightly. Remove the peppers with tongs and set aside to cool.

Cook the filling: In a large skillet, cook the ground beef (or turkey or sausage) over medium-high heat until browned and cooked through. Break it up with a spoon as it cooks. Remove any excess fat from the skillet.

Add the chopped onion and minced garlic to the meat and cook for a few minutes, until the onions are translucent.

Combine ingredients: Stir in the cooked rice, Oliverio Peppers, salt and pepper. Mix everything well and let it simmer for about 5 minutes.

Stuff the peppers: Carefully fill each bell pepper with the meat and rice mixture, pressing it down gently to pack the filling.

Bake: Place the stuffed peppers in a baking dish. If desired, sprinkle shredded mozzarella cheese on top of each stuffed pepper.

Cover the baking dish with aluminum foil. Bake in the preheated oven for about 25–30 minutes, or until the peppers are tender and the filling is heated through.

Serve: Carefully remove the stuffed peppers from the oven. Garnish with fresh parsley or basil, if desired. Serve hot and enjoy.

These stuffed peppers make for a satisfying and flavorful meal. You can customize the recipe by adding your favorite vegetables, spices or additional cheese to the filling to suit your taste preferences.
